This is an old recipe that I grew up eating. In case I hadn’t mentioned it before, I grew up just outside of Philadelphia. A lot of the meals we ate were ones that could stretch to feed a lot of people. This is one such recipe. I made it in my Instant Pot, but it could easily be made on the stove.
- 3/4 lb cooked ham. I used smoked ham. You can adjust the amount to cover your needs.
- 1 lb potatoes, cut into bite sized pieces.
- 1 lb fresh green beans. Clip the ends off, then into bite sized pieces.
- 2 cups water

Add everything into your pot. As you can see, I used new potatoes instead of peeling potatoes. Season with salt and pepper to taste.
Set your Instant Pot to cook for 20 on High Pressure. When it finishes, let the pressure release for 5 or 10 minutes before doing a rapid release.
This is a simple one-pot meal. You can easily swap in frozen green beans if you’re cooking on the stovetop. To brighten up the flavors, splash some balsamic vinegar on your plate.
