75 Budget-Friendly Weeknight Dinner Recipes

You don’t have to spend a lot to make something delicious. It can be on your table in an hour or less. Save money by choosing cheaper proteins like chicken, ground beef, turkey, or vegetarian options. Save time by making these dishes all in one pan or using some of our top kitchen shortcuts. Whatever your style, these 83 cheap and easy meals will please your entire family without breaking the bank.

One of the easiest ways to cut down on dinner costs is to go for cheaper cuts of meat. You can also utilize more expensive ones in creative ways. Try adding ground beefturkey, or chicken to help bulk out old standbys. Try roasting a whole chicken. You can also buy a rotisserie chicken. Utilize it for everything from pizza to tacos all week long. Try adding more expensive seafood or steak to pasta or rice to help make smaller, more affordable portions go further, like in our salmon & potato skillet or our creamy steak fettuccine. It’s all about the way you use the protein that matters, not avoiding them altogether.

If you’ve been on the fence about certain kitchen appliances, like slow cookersair fryers, and Instant Pots, consider this your sign to take the plunge and get one. They help dinners come together SO fast. Check out our more in-depth lists for your air fryer (over 100 recipes!), Instant Pot, and Crockpot.

Even if you’re not ready for another appliance, we bet you have some things in your kitchen already that’ll help you get dinner on the table fast, like sheet pans, a Dutch oven, and casserole dishes. We’ve included a number of our favorite recipes here, like our sheet-pan garlicky shrimp & veggies, our hamburger casserole (no more flipping individual burgers!), or our Mexican beef ‘n rice skillet, but once you’ve got the basics down, feel free to get creative.

One of the best ways to save some money is to go meatless (and not just on Mondays). And we don’t mean by replacing proteins with all those high-priced meat substitutes (though we’re all about those sometimes)—instead we’re talking about making vegetarian meals out of cheap beanstofu, and plants. Try our Indian butter chickpeas, our BBQ pulled mushrooms, our sesame tofu & broccoli stir-fry, or our vegan crunchwraps to see how versatile and filling these meals can be.

72 Quick and Healthy Weeknight Dinners

Though we’re always the first to shout from the rooftops about wildly impressive recipes that are sure to wow guests or loved ones, making it seem like all we do is have constant elaborate dinner parties or romantic date nights, in reality… not so much. Really, most weeknights we turn to easy, healthy dinners that come together quickly and for low effort. If they don’t cost an arm and a leg, even better! We firmly believe saving money doesn’t have to mean giving up flavor or convenience. Check out our list of 72 quick and healthy meals that won’t break the bank for easy weeknight dinner inspiration.

When it comes to healthier meals, we LOVE a veggie for pasta ingredient swap. Cauliflower and zucchini are forever faves, but we’re branching out into other veggies too, like spaghetti squash and butternut squash. We swear, you’ll barely miss the pasta (and can enjoy multiple servings, no problem).

We’re a big fan of the ease of Mexican-inspired tacos, quesadillas, and tostadas for simple weeknight meals. You can fill them with pretty much anything—like we did in our fish taco bowls, our black bean tostadas, or our taco salads—and every member of your household can add as few or as many toppings as they like.

Another great option? Grain bowls and bakes. All you need is a great sauce, like our herby green goddess, our salsa verde, or our tahini sauce; some rice (brownwhite, or cauliflower all work), quinoa, or even noodles; some protein; and any combination of vegetables. Add some crunchy nuts or seeds and you’ll have a solid, satisfying dinner. Bonus: They’re GREAT for cleaning leftover ingredients out of your fridge. Check out our warm tahini ramen noodles, our goddess bowls, our cheesy salsa chicken & cauliflower rice skillet, or our one-pan chicken & quinoa for variations, then get creative and make them your own.

This is a great cookbook! It’s not like any other you have seen. It’s unique, stylish and trendy recipes. It’s a change of pace and great inspiration to typical cookbooks! It’s not entirely outlandish with the recipes, either. They are pretty basic recipes using ingredients that most people have on hand, with a few exceptions. It definitely will inspire you to make some newer recipes and the photos are just so clear and tantalizing! I love the format that they do in their cookbooks! The only drawback to this item is that it is spiral bound. That is good when you want to have a recipe open, but I don’t like flipping through this as much because you have to be careful not to rip the pages, if it came a little warped like mine did. Also, I wish Delish used weight scales in their recipes. Some of the recipes are just cup measures, which can be inaccurate.

Air Fryer Hot Pockets

Here’s the deal: Hot pockets are a delicious convenience. Take the handheld cheese-filled bundle, heat it up, and you have a complete meal in under 10 minutes. The bread-like wrap somehow works with every ham and cheddar, bacon, egg, cheese, or copycat pizza combination. I discovered that “pop and fresh” crescent dough sheets minimize efforts; all you have to do is roll. Read on for some tips for how to make hot pockets at home.

Fillings
We’ve chosen a few that are super-easy to make. The separate recipes below create enough filling for 12 hot pockets, but if you want to mix and match, you can adjust the ratios to whatever you’d like. Your call.
– The Buffalo chicken filling is mixed with your favorite Buffalo sauce, broccoli, and cheddar cheese.
– The spinach-artichoke filling is garlicky and cheesy thanks to using both mozzarella and Pecorino. You can use Parmesan too.
– Finally, the pepperoni cheese filling features mozzarella, pepperoni slices, and tomato sauce. A sprinkle of dried oregano gives it that pizza touch. I used a high-quality jar of marinara sauce, but if you want to make your own, we recommend making our easiest tomato sauce.

Types of air fryers
There are a few types of air fryers on the market, so depending on which one you have, the cook time may differ. I tested the hot pockets in a dual air fryer-toaster oven, then in a single basket air fryer. The cook time was longer in the air fryer-toaster oven, but I was able to cook four at a time as opposed to two.

Storage
Hot pockets are best for up to 3 days in the refrigerator after being air fried. You can also reheat them using the air fryer or oven. You can also stuff them and store them uncooked in the freezer for up to 2 weeks.
